Happy Wednesday everyone!! Today’s my birthday!! It’s suppose to be 72 degrees today and let’s hope it get’s that warm!! I wanted to share with you a cookie recipe that I’ve been loving lately. The cookies are delicious!
I actually discovered the recipe on a bag of Craisins, but after following the recipe, I decided to change a few things to make them better. First thing I did was change the white chocolate to dark chocolate. Not really a big fan on white chocolate. I’ll take dark chocolate any day of the week!
Oatmeal Cranberry Chocolate Cookies
- 2/3 cup butter (I prefer Melt, or if I use real butter, Kerrygold(it’s from grass-fed cows))
- 2/3 cup brown sugar
- 1 tbsp vanilla extract
- 2 large eggs (preferably pasture raised)
- 1 1/2 cups old fashioned oats
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup dried cranberries
- 2/3 cup dark chocolate chips (or you know, 1 cup instead lol)
Preheat oven to 375 degrees. Using an electric mixer, cream together butter and sugar until light and fluffy. Add eggs and vanilla extract, mix well. Combine oats, flour, baking soda, salt and cinnamon in a separate bowl. Slowly add to butter mixture and mix well. Stir in cranberries and chocolate chunks. Drop spoonfuls onto an un-greased cookie sheet. Bake for 10-12 minutes until golden brown. Let cool on a wire rack. Makes about 2 1/2 dozen cookies
Can you guys believe the originally cookie recipe didn’t have vanilla extract? When I first made them, I thought it was strange there was none in them. And as soon as I took a bite, I knew the cookies needed them.
If you want to make the cookies vegan, you can always use apple sauce instead of eggs. I also might try the recipe again with 1 egg and 1/3 cup apple sauce. Let me know if you guys try the recipe that way! I’d love to know how the cookies turn out!
